Rave Recipe-Cold Brew Coffee

Cold brew coffee is a refreshing alternative to your favorite hot morning beverage, especially when the days are warm. Don't be fooled: cold brew coffee is not the same as iced coffee.

Iced coffee has been brewed with hot water and then poured over ice while cold brew coffee is exactly that, brewed with cold or cool water. Brewing coffee in this manner activates the cellular structure of the beans differently than using hot water. This provides a distinct flavor as it extracts different oils than the normal brewing process. So, even with the same beans, you will have two unique flavors depending on whether you brew hot or cold. And, cold brew still retains a high caffeine content, ensuring you will get your much-needed boost!

Experiment!

Cold brew coffee is extremely versatile and practically begs to be experimented with. try adding different flavored syrups like the Rosemary Honey Syrup mentioned below, different types of milk (soy, rice, coconut, almond, cashew) to create a latte or stir in a splash of chocolate syrup for a refreshing mocha.

Cold brew coffee is ideal for use in marinades as well as desserts (think smoothies, ice cream floats or milk shakes) and cocktails.

8 ounces water
4 springs fresh rosemary

Heat water and honey over medium low heat until honey dissolves. In a separate pan, heat water to boiling then add rosemary, stirring for 30 seconds. Remove springs and dip into ice water for one minute. Strip rosemary leaves from stem, add to blender with the honey water mixture. Blend for one minute. Strain and refrigerate. Makes 12 ounces. Keeps for 1 month.
